Ingredients

1 lb (450g) ground beef

1 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tbsp freshly grated ginger

1/4 cup (60ml) low-sodium soy sauce

3 tbsp brown sugar

1 tbsp sesame oil

1/2 tsp crushed red pepper flakes (optional)

1 medium carrot, shredded

1 cup (150g) diced zucchini

3 cups (600g cooked) white or brown rice

2 green onions, thinly sliced

1 tbsp sesame seeds (optional)

Salt and pepper to taste
Instructions

Heat olive oil in a skillet over medium-high heat. Add the chopped onion and cook until softened.

Add the garlic and ginger, cooking until fragrant.

Add ground beef, breaking it apart as it browns. Season lightly with salt and pepper.

In a small bowl, whisk together soy sauce, brown sugar, sesame oil, and crushed red pepper flakes.

Pour the sauce into the skillet and stir well to coat the beef evenly.

Add shredded carrot and diced zucchini. Cook until the vegetables soften slightly.

Serve over warm rice and garnish with green onions and sesame seeds.
