Description

A fast, flavorful, and comforting bowl of savory-sweet beef served over warm rice. A perfect weeknight meal that comes together in minutes.


Ingredients

  • 1 lb (450g) ground beef

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tbsp freshly grated ginger

  • 1/4 cup (60ml) low-sodium soy sauce

  • 3 tbsp brown sugar

  • 1 tbsp sesame oil

  • 1/2 tsp crushed red pepper flakes (optional)

  • 1 medium carrot, shredded

  • 1 cup (150g) diced zucchini

  • 3 cups (600g cooked) white or brown rice

  • 2 green onions, thinly sliced

  • 1 tbsp sesame seeds (optional)

  • Salt and pepper to taste


Instructions

  • Heat olive oil in a skillet over medium-high heat. Add the chopped onion and cook until softened.

  • Add the garlic and ginger, cooking until fragrant.

  • Add ground beef, breaking it apart as it browns. Season lightly with salt and pepper.

  • In a small bowl, whisk together soy sauce, brown sugar, sesame oil, and crushed red pepper flakes.

  • Pour the sauce into the skillet and stir well to coat the beef evenly.

  • Add shredded carrot and diced zucchini. Cook until the vegetables soften slightly.

  • Serve over warm rice and garnish with green onions and sesame seeds.

Notes

  • Substitute ground turkey or chicken if preferred.

  • Add extra vegetables for more nutrition.

  • Adjust sweetness or spice to taste.
