  • 4 medium russet potatoes, peeled and cubed

  • 1 cup shredded cheddar cheese

  • ½ cup mozzarella cheese, shredded

  • 2 tablespoons butter

  • ½ cup sour cream

  • 2 green onions, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 2 cups breadcrumbs

  • Vegetable oil, for frying


Instructions

  • Place the cubed potatoes in a large pot of salted water. Bring to a boil over medium-high heat and cook until tender, about 15–20 minutes. Drain and return the potatoes to the pot.

  • Add butter, sour cream, salt, pepper, and garlic to the drained potatoes. Mash until smooth and creamy. Allow the mixture to cool slightly.

  • Stir in shredded cheddar, mozzarella, and chopped green onions until evenly combined.

  • Using a small scoop or spoon, shape the mixture into 1–2 inch balls on a lightly floured surface.

  • Set up a breading station with three bowls: flour, beaten eggs, and breadcrumbs. Roll each potato ball in flour, dip into eggs, then coat with breadcrumbs.

  • Heat vegetable oil in a deep frying pan or skillet over medium heat until it reaches 350°F (175°C).

  • Carefully fry the potato balls in batches for 3–5 minutes, turning occasionally, until golden brown and crispy.

  • Remove with a slotted spoon and drain on paper towels. Serve warm.

Notes

Use russet potatoes for best texture. Potato mixture can be prepared ahead of time and refrigerated. For a healthier alternative, bake at 400°F (200°C) for 20–25 minutes, turning halfway through. Serve with your favorite dipping sauces.
