A simple yet elegant vegetable side dish that combines tender carrots and crisp green beans in a buttery honey glaze.
Ingredients

1 pound (450 g) carrots, peeled and sliced

1 pound (450 g) green beans, trimmed

3 tablespoons unsalted butter

3 tablespoons honey

2 cloves garlic, minced

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon dried thyme

1 tablespoon fresh lemon juice
Instructions

Blanch carrots in boiling salted water for 3–4 minutes, then cool in ice water.

Blanch green beans for 2–3 minutes and cool similarly. Drain well.

Heat olive oil and butter in a skillet over medium heat.

Add garlic and cook until fragrant. Stir in honey, salt, pepper, and thyme.

Add vegetables and toss to coat. Cook 5–7 minutes until glazed and heated through.

Finish with lemon juice, adjust seasoning, and serve warm.
Notes
For best flavor, use fresh vegetables and mild honey. Adjust sweetness and seasoning to taste, and add herbs for variation.
