Description

A simple yet elegant vegetable side dish that combines tender carrots and crisp green beans in a buttery honey glaze.


Ingredients

  • 1 pound (450 g) carrots, peeled and sliced

  • 1 pound (450 g) green beans, trimmed

  • 3 tablespoons unsalted butter

  • 3 tablespoons honey

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon dried thyme

  • 1 tablespoon fresh lemon juice


Instructions

  • Blanch carrots in boiling salted water for 3–4 minutes, then cool in ice water.

  • Blanch green beans for 2–3 minutes and cool similarly. Drain well.

  • Heat olive oil and butter in a skillet over medium heat.

  • Add garlic and cook until fragrant. Stir in honey, salt, pepper, and thyme.

  • Add vegetables and toss to coat. Cook 5–7 minutes until glazed and heated through.

  • Finish with lemon juice, adjust seasoning, and serve warm.

Notes

For best flavor, use fresh vegetables and mild honey. Adjust sweetness and seasoning to taste, and add herbs for variation.
