Description
A comforting slow cooker meal featuring tender beef bites and soft potatoes coated in a rich garlic butter sauce.
Ingredients
2 pounds beef stew meat, cut into 1½-inch cubes
1½ pounds baby potatoes, halved
4 tablespoons unsalted butter
6 cloves garlic, minced
1 tablespoon olive oil
1 cup low-sodium beef broth
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon onion powder
2 tablespoons fresh parsley, chopped
Instructions
Season the beef cubes with salt, black pepper, paprika, and onion powder.
Heat olive oil in a skillet over medium-high heat and optionally sear the beef for about 2 minutes per side.
Place halved baby potatoes in the bottom of the slow cooker.
Add the seasoned beef on top of the potatoes.
Melt butter in a small saucepan over low heat and add minced garlic, thyme, and rosemary. Cook for about 1 minute until fragrant.
Pour beef broth into the slow cooker and then add the garlic butter mixture.
Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is tender and the potatoes are soft.
Garnish with chopped parsley and serve warm.
Notes
Cut beef pieces evenly so they cook at the same rate. Baby potatoes hold their shape best during long cooking. Searing the beef adds extra flavor but can be skipped for convenience. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
