Ingredients

340 g (12 oz) short pasta

450 g (1 lb) boneless, skinless chicken breast

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried Italian seasoning

1 large romaine lettuce heart, chopped

½ cup (50 g) grated Parmesan-style cheese

1 cup (100 g) croutons

¾ cup (180 g) plain Greek yogurt

¼ cup (60 ml) olive oil

2 tablespoons lemon juice

1 tablespoon Dijon mustard

2 cloves garlic, minced
Instructions

Cook pasta in salted boiling water until al dente, then drain and cool.

Season chicken with olive oil, salt, pepper, garlic powder, and Italian seasoning.

Cook chicken in a skillet over medium heat until fully cooked; rest and slice.

Whisk together Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic, and Parmesan-style cheese.

Combine pasta, chicken, lettuce, and croutons in a bowl.

Toss with dressing until evenly coated and serve or store for later.
