Description

Ingredients

  • 1 pound (450 g) ground beef

  • 1 tablespoon (15 ml) olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 3 medium carrots, sliced

  • 3 medium potatoes, cubed

  • 2 celery stalks, sliced

  • 1 cup (150 g) frozen peas

  • 1 can (14.5 oz / 410 g) diced tomatoes

  • 4 cups (950 ml) beef broth

  • 1 tablespoon (15 g) tomato paste

  • 1 teaspoon (2 g) dried thyme

  • 1 teaspoon (2 g) dried parsley

  • 1 teaspoon (2 g) paprika

  • Salt and pepper to taste


Instructions

  • Brown the ground beef in a large pot over medium heat. Drain excess fat if needed.

  • Add onion and cook 3 to 4 minutes. Stir in garlic for 1 minute.

  • Add carrots, potatoes, celery, thyme, parsley, paprika, salt, and pepper. Stir in tomato paste.

  • Pour in diced tomatoes and beef broth. Stir well.

  • Bring to a boil, reduce heat, cover, and simmer 35 to 45 minutes.

  • Add peas and cook 5 minutes more. Adjust seasoning as needed.

Notes

  • Add corn, green beans, or barley for variation.

  • Use ground turkey or chicken as a lighter alternative.

  • If stew is too thin, simmer uncovered or use a cornstarch slurry.
