Ingredients

1 pound (450 g) ground beef

1 tablespoon (15 ml) olive oil

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

3 medium potatoes, cubed

2 celery stalks, sliced

1 cup (150 g) frozen peas

1 can (14.5 oz / 410 g) diced tomatoes

4 cups (950 ml) beef broth

1 tablespoon (15 g) tomato paste

1 teaspoon (2 g) dried thyme

1 teaspoon (2 g) dried parsley

1 teaspoon (2 g) paprika

Salt and pepper to taste
Instructions

Brown the ground beef in a large pot over medium heat. Drain excess fat if needed.

Add onion and cook 3 to 4 minutes. Stir in garlic for 1 minute.

Add carrots, potatoes, celery, thyme, parsley, paprika, salt, and pepper. Stir in tomato paste.

Pour in diced tomatoes and beef broth. Stir well.

Bring to a boil, reduce heat, cover, and simmer 35 to 45 minutes.

Add peas and cook 5 minutes more. Adjust seasoning as needed.
