A wholesome and easy one-pan meal featuring seasoned ground turkey, roasted sweet potatoes, and vibrant vegetables.
Ingredients
500 g (1 lb) ground turkey
2 medium sweet potatoes (about 500 g / 1 lb), diced
1 medium onion, chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon oregano
½ teaspoon black pepper
1 teaspoon salt
½ teaspoon chili flakes (optional)
2 tablespoons tomato paste
120 ml (½ cup) vegetable broth
Instructions
Preheat oven to 200°C (400°F).
Toss sweet potatoes with olive oil, salt, and pepper. Roast for 15 minutes.
Cook onion and garlic in a skillet until softened.
Add ground turkey and cook until browned.
Stir in spices, tomato paste, and broth.
Combine turkey mixture with sweet potatoes.
Add bell pepper and zucchini.
Bake for 20–25 minutes until fully cooked.
Notes
You can customize vegetables based on availability. Store leftovers in the refrigerator for up to 4 days or freeze for longer storage.
