Ingredients

12 ounces (340 g) chicken or turkey sausage, sliced

1 tablespoon olive oil

1 medium yellow onion, diced

1 red bell pepper, sliced

3 cloves garlic, minced

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon onion powder

¼ teaspoon black pepper

2 ½ cups (600 ml) chicken broth

1 cup (240 ml) heavy cream

8 ounces (225 g) uncooked penne or rotini pasta

½ cup (50 g) grated Parmesan-style cheese

Salt, to taste
Instructions

Heat olive oil in a large pot over medium heat and brown the sausage. Remove and set aside.

Cook onion and bell pepper in the same pot until softened.

Add garlic and spices, stirring until fragrant.

Pour in chicken broth and cream, then add pasta.

Simmer until pasta is tender, stirring occasionally.

Stir in sausage and cheese, cooking until sauce thickens.

Season to taste and serve hot.
Notes
Adjust Cajun seasoning to control spice level. Add a splash of broth when reheating to maintain a creamy sauce.
