A rich and comforting one-pot pasta made with Cajun-spiced sausage, tender pasta, and a creamy, flavorful sauce that comes together quickly and easily.


Ingredients

  • 12 ounces (340 g) chicken or turkey sausage, sliced

  • 1 tablespoon olive oil

  • 1 medium yellow onion, diced

  • 1 red bell pepper, sliced

  • 3 cloves garlic, minced

  • 2 teaspoons Cajun seasoning

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried oregano

  • ½ teaspoon onion powder

  • ¼ teaspoon black pepper

  • 2 ½ cups (600 ml) chicken broth

  • 1 cup (240 ml) heavy cream

  • 8 ounces (225 g) uncooked penne or rotini pasta

  • ½ cup (50 g) grated Parmesan-style cheese

  • Salt, to taste


Instructions

  • Heat olive oil in a large pot over medium heat and brown the sausage. Remove and set aside.

  • Cook onion and bell pepper in the same pot until softened.

  • Add garlic and spices, stirring until fragrant.

  • Pour in chicken broth and cream, then add pasta.

  • Simmer until pasta is tender, stirring occasionally.

  • Stir in sausage and cheese, cooking until sauce thickens.

  • Season to taste and serve hot.

Notes

Adjust Cajun seasoning to control spice level. Add a splash of broth when reheating to maintain a creamy sauce.
