  • 1 pound (450g) steak (ribeye, sirloin, or preferred cut), cut into 1-inch cubes

  • 1 pound (450g) baby potatoes, halved

  • 3 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

  • ½ teaspoon smoked paprika

  • Salt and black pepper, to taste

  • Fresh parsley, chopped, for garnish


Instructions

  • Prepare the steak, potatoes, garlic, and herbs before cooking.

  • Heat olive oil in a large skillet over medium heat. Add halved potatoes, season with salt, pepper, and smoked paprika, and cook 10–12 minutes until golden and tender. Remove potatoes from the skillet.

  • Increase heat to medium-high. Add 2 tablespoons butter and the steak cubes in a single layer. Cook 3–4 minutes per side until desired doneness, seasoning with salt, pepper, and thyme.

  • Push steak to one side and add minced garlic. Sauté 30–60 seconds until fragrant, then mix with butter and steak.

  • Return potatoes to the skillet and toss gently to coat in garlic butter sauce. Let flavors meld for 1–2 minutes.

  • Transfer to a serving platter, garnish with chopped parsley, and serve immediately.

Notes

  • Use ribeye or sirloin for the best results; avoid lean cuts that can become tough.

  • Ensure potatoes are cut into similar sizes for even cooking.

  • Do not overcrowd the skillet to achieve a proper sear.

  • Fresh garlic provides the best flavor; add after searing the steak to prevent burning.
