1 pound (450g) steak (ribeye, sirloin, or preferred cut), cut into 1-inch cubes

1 pound (450g) baby potatoes, halved

3 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish
Instructions

Prepare the steak, potatoes, garlic, and herbs before cooking.

Heat olive oil in a large skillet over medium heat. Add halved potatoes, season with salt, pepper, and smoked paprika, and cook 10–12 minutes until golden and tender. Remove potatoes from the skillet.

Increase heat to medium-high. Add 2 tablespoons butter and the steak cubes in a single layer. Cook 3–4 minutes per side until desired doneness, seasoning with salt, pepper, and thyme.

Push steak to one side and add minced garlic. Sauté 30–60 seconds until fragrant, then mix with butter and steak.
