Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried Italian herbs

  • 1 cup cherry tomatoes, halved

  • 1 red bell pepper, sliced

  • 1 small red onion, sliced

  • 3 cloves garlic, minced

  • 1/4 cup balsamic vinegar

  • 2 tablespoons honey or maple syrup

  • 1/2 cup chicken broth

  • Fresh parsley, chopped, for garnish


Instructions

  • Pat the chicken dry and season both sides with salt, pepper, garlic powder, onion powder, and Italian herbs.

  • Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.

  • Add cherry tomatoes, red bell pepper, and red onion to the pan. Sauté for 3–4 minutes until slightly softened. Add minced garlic and cook 30 seconds more.

  • Pour in balsamic vinegar and chicken broth, scraping up any browned bits. Stir in honey or maple syrup.

  • Return chicken to the pan, spoon sauce and vegetables over it, cover, and simmer on medium-low for 8–10 minutes, until chicken reaches 165°F (74°C).

  • Remove from heat, garnish with chopped parsley, and serve immediately with your choice of sides.

  • Ensure chicken breasts are similar in size for even cooking.

  • Adjust honey or maple syrup to taste for sweetness preference.

  • Leftovers can be stored in the fridge for up to 3 days and reheated gently.
