4 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs

1 cup cherry tomatoes, halved

1 red bell pepper, sliced

1 small red onion, sliced

3 cloves garlic, minced

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

1/2 cup chicken broth

Fresh parsley, chopped, for garnish
Instructions

Pat the chicken dry and season both sides with salt, pepper, garlic powder, onion powder, and Italian herbs.

Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.

Add cherry tomatoes, red bell pepper, and red onion to the pan. Sauté for 3–4 minutes until slightly softened. Add minced garlic and cook 30 seconds more.
