Description

A vibrant mix of fresh berries and tropical fruit tossed in a light honey lime poppy seed dressing. Perfect for brunch, gatherings, or a refreshing dessert.


Ingredients

2 cups fresh strawberries, hulled and sliced
1 ½ cups fresh blueberries
1 ½ cups fresh pineapple, cut into ½-inch chunks
2 cups seedless green grapes, halved
2 kiwis, peeled and sliced
1 cup mandarin orange segments
1 cup raspberries
3 tablespoons honey
2 tablespoons freshly squeezed lime juice
1 teaspoon lime zest
1 tablespoon poppy seeds
1 teaspoon pure vanilla extract


Instructions

Wash and dry all fruit thoroughly.

Slice strawberries, cut pineapple into chunks, halve grapes, peel and slice kiwi, and drain mandarin oranges if needed.

Place all prepared fruit into a large mixing bowl.

In a small bowl, whisk together honey, lime juice, lime zest, poppy seeds, and vanilla extract until smooth.

Pour the dressing over the fruit and gently toss to coat evenly.

Cover and refrigerate for at least 30 minutes before serving for best flavor.

Notes

For best texture, add raspberries just before serving.
Store in an airtight container in the refrigerator for up to 3 days.
Substitute maple syrup for honey to make it vegan.
Use firm, ripe fruit to prevent excess liquid in the salad.
