Ingredients

Pasta – 400 g (14 oz)

Olive oil – 2 tablespoons

Butter – 2 tablespoons

Garlic – 6 cloves, minced

Tomato passata or crushed tomatoes – 400 g (14 oz)

Tomato paste – 2 tablespoons

Heavy cream – 240 ml (1 cup)

Salt – 1 teaspoon

Black pepper – ½ teaspoon

Dried basil – 1 teaspoon

Dried oregano – 1 teaspoon

Red chili flakes – ¼ teaspoon (optional)

Fresh basil – 10 g (½ cup), chopped

Grated cheese – 60 g (½ cup), optional
Instructions

Cook pasta in salted water until al dente; reserve 120 ml (½ cup) pasta water and drain.

Heat olive oil and butter in a skillet over medium heat. Add garlic and sauté briefly.

Stir in tomato passata and tomato paste; season and simmer for 8–10 minutes.

Lower heat and add cream, stirring until smooth.

Add pasta and toss to coat, using pasta water as needed.

Finish with fresh basil and serve warm.
Notes
For best results, reheat gently and adjust consistency with a splash of cream or pasta water.
