Ingredients

Gnocchi – 500 g (17.5 oz)

Olive oil – 2 tablespoons

Onion – 1 small (100 g / 3.5 oz), finely chopped

Garlic – 4 cloves, minced

Vegetable broth – 240 ml (1 cup)

Heavy cream – 240 ml (1 cup)

Fresh spinach – 120 g (4 cups loosely packed)

Feta cheese – 120 g (4 oz), crumbled

Black pepper – ½ teaspoon

Salt – to taste

Red pepper flakes – optional, ¼ teaspoon
Instructions

Heat olive oil in a large skillet over medium heat.

Add onion and sauté until soft, about 3–4 minutes.

Stir in garlic and cook for 30 seconds.

Add gnocchi and vegetable broth, stirring gently.

Pour in heavy cream and simmer until slightly thickened.

Add spinach and cook until wilted.

Stir in feta, black pepper, and red pepper flakes if using.
