Ingredients

  • Gnocchi – 500 g (17.5 oz)

  • Olive oil – 2 tablespoons

  • Onion – 1 small (100 g / 3.5 oz), finely chopped

  • Garlic – 4 cloves, minced

  • Vegetable broth – 240 ml (1 cup)

  • Heavy cream – 240 ml (1 cup)

  • Fresh spinach – 120 g (4 cups loosely packed)

  • Feta cheese – 120 g (4 oz), crumbled

  • Black pepper – ½ teaspoon

  • Salt – to taste

  • Red pepper flakes – optional, ¼ teaspoon


Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add onion and sauté until soft, about 3–4 minutes.

  • Stir in garlic and cook for 30 seconds.

  • Add gnocchi and vegetable broth, stirring gently.

  • Pour in heavy cream and simmer until slightly thickened.

  • Add spinach and cook until wilted.

  • Stir in feta, black pepper, and red pepper flakes if using.

  • Adjust salt to taste and serve warm.
