Ingredients
-
4 medium sweet potatoes, peeled and cut into 1-inch cubes
-
3 tablespoons olive oil
-
1 teaspoon kosher salt
-
½ teaspoon black pepper
-
1 teaspoon garlic powder
-
1 teaspoon dried thyme
-
1 teaspoon dried rosemary, crushed
-
½ teaspoon smoked paprika (optional)
-
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
-
Preheat the oven to 400°F (200°C).
-
Peel and cut the sweet potatoes into 1-inch cubes.
-
In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, garlic powder, thyme, rosemary, and smoked paprika until evenly coated.
-
Arrange the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
-
Roast for 25–30 minutes, tossing halfway through, until tender and golden brown.
-
Check doneness by inserting a fork; it should slide in easily. Roast an additional 5 minutes if extra crispiness is desired.
-
Transfer to a serving dish and garnish with fresh parsley. Serve warm.
Notes
-
For extra crispiness, broil for 2–3 minutes at the end of roasting, watching closely.
-
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days and reheated in the oven.
-
You can swap or add herbs to customize flavor—sage, oregano, or fresh herbs work well.
-
Optional: drizzle with a little maple syrup or lemon juice for a sweet or tangy twist.
