Ingredients

1 lb (450 g) ground turkey

1 tbsp olive oil

1 small onion, finely diced (120 g)

3 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp black pepper

1 tsp salt

1/2 tsp dried thyme

1/2 tsp onion powder

1/4 tsp ground coriander

1 cup (200 g) long-grain white rice

2 cups (480 ml) water or low-sodium broth

1/2 tsp salt (for rice)

1 tbsp butter or olive oil

1 cup (150 g) diced bell peppers

1 cup (130 g) diced zucchini

1/2 cup (75 g) frozen peas

1 tbsp olive oil (for vegetables)
Instructions

Rinse rice and cook with water or broth, salt, and butter or oil. Simmer for 15 minutes, rest 5 minutes, and fluff.

Sauté bell peppers and zucchini in olive oil for 4–5 minutes. Add peas, season lightly, and set aside.

Cook onion in olive oil until soft. Add garlic, then ground turkey, breaking it apart as it browns.

Season turkey with spices and salt. Stir in vegetables and cook until heated through.

Assemble bowls with rice on the bottom and turkey mixture on top.
