Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • 1 tablespoon olive oil

  • 1 cup chicken broth

  • ½ cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ cup sun-dried tomatoes, chopped

  • 3 cloves garlic, minced

  • ½ teaspoon red pepper flakes (optional)

  • 2 teaspoons cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)

  • Fresh parsley, chopped, for garnish

  • Cooked pasta, rice, or mashed potatoes, for serving

Instructions

  • Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.

  • (Optional) In a skillet, heat olive oil over medium heat and sear chicken 2–3 minutes per side until lightly golden.

  • Place the chicken in the Crockpot. In a separate bowl, mix chicken broth, heavy cream, Parmesan, sun-dried tomatoes, garlic, and red pepper flakes. Pour over chicken.

  • Cover and cook on low for 4–6 hours, until chicken reaches 165°F (74°C) and is tender.

  • (Optional) To thicken the sauce, remove chicken, stir in cornstarch-water mixture, and cook on high 10–15 minutes until thickened.

  • Serve chicken over pasta, rice, or mashed potatoes, spooning sauce on top. Garnish with fresh parsley.

Notes

  • Searing chicken adds extra flavor but can be skipped for convenience.

  • Adjust seasoning to taste.

  • Add vegetables in the last hour of cooking to avoid overcooking.

  • Sauce can be thickened with cornstarch for a creamier texture.
