Ingredients

900 g (2 lb) boneless, skinless chicken thighs or breasts

120 ml (1/2 cup) hoisin sauce

60 ml (1/4 cup) soy sauce

60 ml (1/4 cup) honey

50 g (1/4 cup) brown sugar

2 tablespoons oyster sauce

2 tablespoons apple juice

1 tablespoon sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon Chinese five-spice powder

1/2 teaspoon ground white pepper

1/2 teaspoon salt
Instructions

Whisk all marinade ingredients together in a bowl until smooth.

Coat the chicken evenly with the marinade and refrigerate for at least 2 hours or overnight.

Preheat oven to 200°C (400°F) and place chicken on a wire rack over a lined baking tray.

Bake for 20 minutes, brush with extra marinade, flip, and bake for another 15–20 minutes.

Grill/broil for 2–3 minutes to caramelize the glaze.

Rest for 5 minutes before slicing and serving.
