Ingredients
-
24 large white or cremini mushrooms
-
4 oz cream cheese, softened
-
1/2 cup shredded mozzarella cheese
-
1/4 cup grated Parmesan cheese
-
2 cloves garlic, minced
-
2 tablespoons fresh parsley, finely chopped
-
1 teaspoon fresh thyme, finely chopped
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
2 tablespoons olive oil
-
1/4 teaspoon red pepper flakes (optional)
Instructions
-
Prepare the Mushrooms
Clean the mushrooms with a damp cloth or paper towel to remove any dirt. Avoid rinsing under running water to prevent them from absorbing excess moisture. Carefully remove the stems and set aside for the filling. -
Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease with olive oil. -
Prepare the Filling
Finely chop the reserved mushroom stems. In a medium bowl, combine cream cheese, mozzarella, Parmesan, garlic, parsley, thyme, salt, and black pepper. Mix until smooth. Fold in the chopped mushroom stems and red pepper flakes if desired. -
Stuff the Mushrooms
Fill each mushroom cap with the cheese mixture, slightly mounding it. Arrange on the prepared baking sheet, leaving space between each mushroom for even cooking. -
Bake to Perfection
Drizzle lightly with olive oil and bake for 20–25 minutes until the mushrooms are tender and the filling is golden and bubbly. Optionally, broil for 1–2 minutes for extra browning. -
Serve and Garnish
Allow mushrooms to cool slightly before serving. Garnish with additional chopped parsley and serve warm as an appetizer, side dish, or snack.
