Ingredients

  • 4 cups mashed sweet potatoes (about 4 medium sweet potatoes)

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 large eggs, lightly beaten

  • 1/2 cup milk

  • 1/2 cup unsalted butter, melted

For the Crunch Topping:

  • 1 cup rolled oats

  • 1/2 cup all-purpose flour

  • 1/2 cup brown sugar

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/2 cup unsalted butter, cold and cubed


Instructions

  • Preheat your oven to 350°F (175°C). Wash, peel, and cube the sweet potatoes. Boil them in a large pot of water until tender, about 15-20 minutes. Drain and mash until smooth.

  • In a large mixing bowl, combine mashed sweet potatoes with granulated sugar, brown sugar, salt, vanilla extract, eggs, milk, and melted butter. Stir until smooth and creamy.

  • In a separate bowl, mix rolled oats, flour, brown sugar, cinnamon, and nutmeg. Add cold, cubed butter and blend with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  • Grease a 9×13-inch baking dish. Pour the sweet potato mixture evenly into the dish and sprinkle the oat topping over it, covering all edges.

  • Bake for 35-40 minutes, until the topping is golden and the filling is set.

  • Let the bake cool slightly before serving. Enjoy warm or at room temperature.
