  • 1 French baguette or rustic bread, sliced into ½-inch thick rounds

  • 3 large onions, thinly sliced

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 4 ounces goat cheese, softened

  • 1 tablespoon fresh thyme leaves

  • 2 tablespoons balsamic vinegar (optional)

  • Olive oil, for brushing the bread


Instructions

  • Preheat your oven to 375°F (190°C). Arrange the bread slices on a baking sheet and lightly brush with olive oil on both sides. Bake for 8–10 minutes, flipping halfway through, until golden and crisp. Set aside.

  • In a large skillet, heat butter and olive oil over medium heat. Add sliced onions, sugar, salt, and black pepper. Cook slowly for 25–30 minutes, stirring occasionally, until onions are deep golden brown and caramelized. Stir in balsamic vinegar during the last few minutes if using. Remove from heat and let cool slightly.

  • Spread softened goat cheese evenly over each toasted bread slice. Top with a spoonful of caramelized onions and sprinkle with fresh thyme leaves.

  • Arrange the crostini on a serving platter. Serve warm immediately or at room temperature. Optional: drizzle with a little olive oil or balsamic reduction before serving.
