Ingredients

  • 2 cups cherry tomatoes, diced

  • 1 medium red bell pepper, diced

  • 1 medium green bell pepper, diced

  • 1 small red onion, finely chopped

  • 1 cup fresh corn kernels

  • 1 (15-ounce) can black beans, drained and rinsed

  • 1 (15-ounce) can black-eyed peas, drained and rinsed

  • ½ cup fresh cilantro, chopped

  • 1 jalapeño, minced (optional)

  • 1 ripe avocado, diced

  • ⅓ cup extra-virgin olive oil

  • ¼ cup freshly squeezed lime juice

  • 1 tablespoon red wine vinegar

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • ½ teaspoon garlic powder

  • ¾ teaspoon salt

  • ½ teaspoon black pepper


Instructions

  • Dice all vegetables and rinse the beans thoroughly.

  • In a large bowl, combine vegetables, beans, and cilantro.

  • Whisk together olive oil, lime juice, vinegar, and spices.

  • Pour dressing over the mixture and toss gently.

  • Chill for at least 30 minutes.

  • Fold in avocado just before serving.
