Ingredients

  • 2 tablespoons olive oil

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 2 medium potatoes, diced

  • 1 small zucchini, diced

  • 1 cup cauliflower florets

  • 4 cups vegetable broth

  • 1 cup milk or plant-based milk

  • ½ cup heavy cream or dairy-free alternative

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon dried thyme

  • ½ teaspoon dried oregano

  • ¼ teaspoon ground nutmeg

  • 1 cup fresh spinach, chopped

  • ½ cup frozen peas

  • 1 tablespoon lemon juice


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Cook onion until soft, then add garlic.

  • Add all vegetables and stir well.

  • Pour in vegetable broth and simmer until vegetables are tender.

  • Blend half the soup until creamy.

  • Stir in milk, cream, and seasonings.

  • Add spinach and peas and cook briefly.

  • Finish with lemon juice and adjust seasoning.

Notes

Blend more or less of the soup depending on your preferred texture. Add extra broth or milk if the soup thickens too much when reheating.
