Description

A simple, comforting slow-cooked beef dish with rich, savory flavors and tender texture, perfect for busy days or cozy family dinners.


Ingredients

  • Beef chuck roast – 3 pounds

  • Dry ranch seasoning mix – 1 packet (about 1 ounce)

  • Dry au jus seasoning mix – 1 packet (about 1 ounce)

  • Unsalted butter – 1/2 cup (1 stick)

  • Pepperoncini peppers – 6 to 8 whole

  • Pepperoncini juice – 1/4 cup

  • Garlic powder – 1 teaspoon (optional)

  • Onion powder – 1 teaspoon (optional)


Instructions

  • Place the beef chuck roast into the crock pot.

  • Sprinkle the ranch seasoning mix and au jus seasoning mix evenly over the roast.

  • Add the butter on top of the beef.

  • Place the pepperoncini peppers around the roast and pour in the pepperoncini juice.

  • Cover and cook on low for 8 hours or on high for 4 to 5 hours until tender.

  • Shred the beef with forks, mix with the juices, and serve.

Notes

For best results, use a well-marbled chuck roast. Adjust the number of pepperoncini peppers to suit your taste. Leftovers can be stored in the refrigerator for up to four days and reheat beautifully.
