A quick and flavorful stir-fry featuring tender chicken, crisp vegetables, and a creamy peanut sauce inspired by classic Thai flavors.
Ingredients

1 lb (450 g) boneless, skinless chicken breast, thinly sliced

2 tablespoons vegetable oil

1 red bell pepper, thinly sliced

1 cup (90 g) snow peas or sugar snap peas

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 cup (120 g) creamy peanut butter

3 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey or brown sugar

1 tablespoon fresh lime juice

1/2 cup (120 ml) chicken broth

1 teaspoon chili paste or red pepper flakes

3 green onions, sliced
Instructions

Whisk together peanut butter, soy sauce, rice vinegar, honey or brown sugar, lime juice, chicken broth, and chili paste until smooth.

Heat 1 tablespoon oil in a skillet over medium-high heat and cook chicken for 4–5 minutes until done. Remove and set aside.

Add remaining oil and stir-fry bell pepper, snow peas, and carrot for 3–4 minutes.

Add garlic and ginger and cook briefly until fragrant.

Return chicken to the pan, pour in sauce, and simmer for 2–3 minutes until thickened.

Garnish with green onions and serve hot.
