Description

A quick and flavorful stir-fry featuring tender chicken, crisp vegetables, and a creamy peanut sauce inspired by classic Thai flavors.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, thinly sliced

  • 2 tablespoons vegetable oil

  • 1 red bell pepper, thinly sliced

  • 1 cup (90 g) snow peas or sugar snap peas

  • 1 medium carrot, julienned

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1/2 cup (120 g) creamy peanut butter

  • 3 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 2 tablespoons honey or brown sugar

  • 1 tablespoon fresh lime juice

  • 1/2 cup (120 ml) chicken broth

  • 1 teaspoon chili paste or red pepper flakes

  • 3 green onions, sliced


Instructions

  • Whisk together peanut butter, soy sauce, rice vinegar, honey or brown sugar, lime juice, chicken broth, and chili paste until smooth.

  • Heat 1 tablespoon oil in a skillet over medium-high heat and cook chicken for 4–5 minutes until done. Remove and set aside.

  • Add remaining oil and stir-fry bell pepper, snow peas, and carrot for 3–4 minutes.

  • Add garlic and ginger and cook briefly until fragrant.

  • Return chicken to the pan, pour in sauce, and simmer for 2–3 minutes until thickened.

  • Garnish with green onions and serve hot.

Notes

This recipe reheats well and can be customized with different vegetables or spice levels to suit your taste.
