Ingredients

1 packet ramen noodles (3 oz / 85 g), seasoning discarded

1 cup (240 ml) marinara sauce

1 cup (240 ml) low-sodium vegetable broth or chicken broth

1 tablespoon (14 g) butter

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes (optional)

1/2 cup (56 g) shredded mozzarella cheese

1/4 cup (28 g) shredded cheddar cheese

1/4 cup (30 g) diced bell peppers

1/4 cup (30 g) sliced mushrooms

2 tablespoons (10 g) sliced black olives

2 tablespoons (10 g) chopped green onions

Instructions

In a medium pot, melt the butter over medium heat. Stir in oregano, basil, garlic powder, and onion powder for 30 seconds.

Add marinara sauce and broth. Bring to a gentle simmer.

Add bell peppers and mushrooms. Cook for 2–3 minutes.

Add ramen noodles and cook until tender, about 2–3 minutes.

Stir in mozzarella and cheddar until fully melted.

Add olives and green onions. Adjust seasoning.

Notes
For extra creaminess, add 1 tablespoon of cream cheese. Add fresh spinach, extra veggies, or your preferred protein to customize the dish.
