Description

A hearty and comforting dish made with seasoned black beans, fluffy rice, and flavorful halal sausage. Perfect for weeknight dinners, meal prep, or a satisfying family meal.


Ingredients

2 tablespoons olive oil
340 g halal smoked beef sausage or chicken sausage, sliced
1 medium onion, chopped
1 green bell pepper, diced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon black pepper
1 teaspoon salt
1 bay leaf
2 cans black beans (400 g each), drained and rinsed
1 cup (240 ml) vegetable broth
1 tablespoon tomato paste
1 teaspoon lime juice

For the rice:

1 cup (200 g) long-grain rice
2 cups (480 ml) water or vegetable broth
½ teaspoon salt

Optional toppings:

¼ cup fresh cilantro, chopped
1 lime, cut into wedges
½ avocado, sliced
¼ cup diced tomatoes


Instructions

In a saucepan, combine rice, water or broth, and salt. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes until tender.

Heat olive oil in a large skillet over medium heat and brown the sliced sausage for about 4–5 minutes. Remove and set aside.

In the same skillet, sauté chopped onion and diced bell pepper for about 5 minutes until softened.

Add minced garlic and cook for 30 seconds.

Stir in cumin, smoked paprika, oregano, black pepper, and salt.

Add black beans, vegetable broth, tomato paste, bay leaf, and the cooked sausage.

Simmer for 10–12 minutes until the mixture thickens.

Stir in lime juice and remove the bay leaf.

Serve the beans and sausage mixture over cooked rice and add desired toppings.

Notes

Use smoked halal sausage for the best flavor.
Fresh lime juice brightens the dish and balances the richness of the beans.
Leftovers can be refrigerated for up to 4 days and taste even better the next day.
For a vegetarian option, replace sausage with sautéed mushrooms or plant-based sausage alternatives.
