Ingredients
4 cups (600 g) watermelon, cubed
1 cup (150 g) feta cheese, crumbled
½ small red onion (50 g), thinly sliced
¼ cup (10 g) fresh mint, chopped
¼ cup (10 g) fresh basil, chopped
2 tablespoons (30 ml) olive oil
1 tablespoon (15 ml) lemon juice
½ teaspoon (2.5 g) salt
¼ teaspoon (1 g) black pepper
Instructions
Cut the watermelon into cubes and place in a large bowl.
Thinly slice the red onion and add to the bowl.
Chop the mint and basil, then mix them in.
Add crumbled feta cheese.
In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad and toss gently.
Serve immediately for best flavor.
