Description

Ingredients

  • Salmon fillets – 4 (about 150 g / 5 oz each)

  • Olive oil – 1 tablespoon

  • Onion – 1 medium, finely chopped

  • Garlic cloves – 5, minced

  • Fresh ginger – 1 teaspoon, grated

  • Curry powder – 2 teaspoons

  • Ground turmeric – ½ teaspoon

  • Paprika – ½ teaspoon

  • Salt – 1 teaspoon

  • Black pepper – ½ teaspoon

  • Coconut milk – 400 ml / 13.5 oz

  • Lime juice – 1 tablespoon

  • Fresh cilantro – 2 tablespoons, chopped (optional)


Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add onion and cook until soft, about 3–4 minutes.

  • Stir in garlic and ginger, cooking briefly until fragrant.

  • Add curry powder, turmeric, paprika, salt, and pepper. Stir well.

  • Pour in coconut milk and bring to a gentle simmer.

  • Let the sauce cook for 3–5 minutes to develop flavor.

  • Add salmon fillets, spooning sauce over them.

  • Cover and cook for 8–10 minutes until salmon is tender.

  • Finish with lime juice and garnish with cilantro before serving.

  • Use full-fat coconut milk for best texture and flavor.
