Ingredients

Salmon fillets – 4 (about 150 g / 5 oz each)

Olive oil – 1 tablespoon

Onion – 1 medium, finely chopped

Garlic cloves – 5, minced

Fresh ginger – 1 teaspoon, grated

Curry powder – 2 teaspoons

Ground turmeric – ½ teaspoon

Paprika – ½ teaspoon

Salt – 1 teaspoon

Black pepper – ½ teaspoon

Coconut milk – 400 ml / 13.5 oz

Lime juice – 1 tablespoon

Fresh cilantro – 2 tablespoons, chopped (optional)
Instructions

Heat olive oil in a large skillet over medium heat.

Add onion and cook until soft, about 3–4 minutes.

Stir in garlic and ginger, cooking briefly until fragrant.

Add curry powder, turmeric, paprika, salt, and pepper. Stir well.

Pour in coconut milk and bring to a gentle simmer.

Let the sauce cook for 3–5 minutes to develop flavor.

Add salmon fillets, spooning sauce over them.

Cover and cook for 8–10 minutes until salmon is tender.
