450 g (1 lb) chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

225 g (8 oz) spaghetti, broken in half

720 ml (3 cups) chicken broth

240 ml (1 cup) heavy cream

60 g (½ cup) grated Parmesan cheese

1 teaspoon dried Italian herbs

½ teaspoon salt, or to taste

½ teaspoon black pepper

Optional: chopped parsley for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until lightly browned on all sides. Remove and set aside.

In the same pot, add the chopped onion and cook until soft and translucent. Stir in the garlic and cook for about 30 seconds until fragrant.

Add the spaghetti and chicken broth to the pot, stirring to combine. Bring to a gentle simmer.

Cook, stirring occasionally, until the spaghetti is tender and most of the liquid has been absorbed.

Return the chicken to the pot and stir in the heavy cream, Parmesan cheese, Italian herbs, salt, and black pepper.

Simmer for a few minutes until the sauce thickens and coats the pasta evenly.
