Description

This creamy chicken one-pot spaghetti is a comforting, satisfying meal made with simple ingredients and minimal cleanup. It is perfect for busy weeknights or whenever you crave a warm, homemade pasta dish.


Ingredients

  • 450 g (1 lb) chicken breast, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 4 cloves garlic, minced

  • 225 g (8 oz) spaghetti, broken in half

  • 720 ml (3 cups) chicken broth

  • 240 ml (1 cup) heavy cream

  • 60 g (½ cup) grated Parmesan cheese

  • 1 teaspoon dried Italian herbs

  • ½ teaspoon salt, or to taste

  • ½ teaspoon black pepper

  • Optional: chopped parsley for garnish


Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until lightly browned on all sides. Remove and set aside.

  • In the same pot, add the chopped onion and cook until soft and translucent. Stir in the garlic and cook for about 30 seconds until fragrant.

  • Add the spaghetti and chicken broth to the pot, stirring to combine. Bring to a gentle simmer.

  • Cook, stirring occasionally, until the spaghetti is tender and most of the liquid has been absorbed.

  • Return the chicken to the pot and stir in the heavy cream, Parmesan cheese, Italian herbs, salt, and black pepper.

  • Simmer for a few minutes until the sauce thickens and coats the pasta evenly.

  • Remove from heat and garnish with parsley if desired. Serve warm.

Notes

  • Stir the pasta occasionally to prevent sticking.

  • Adjust seasoning to taste before serving.

  • Add a splash of broth or milk when reheating to restore creaminess.
