Ingredients
2 large chicken breasts (500 g)
1 tablespoon olive oil (15 ml)
1 teaspoon garlic powder (5 g)
1 teaspoon paprika (5 g)
½ teaspoon black pepper (2 g)
½ teaspoon salt (2 g)
½ teaspoon oregano (2 g)
1 cup cottage cheese (240 g)
2 tablespoons yogurt (30 g)
1 teaspoon lemon juice (5 ml)
1 cup cooked rice or quinoa (200 g)
1 cup cucumber (150 g)
½ cup carrots (75 g)
½ cup cherry tomatoes (75 g)
¼ cup parsley (15 g)
2 tablespoons hot sauce (30 ml)
1 tablespoon olive oil (15 ml)
1 teaspoon honey (5 ml)
½ teaspoon chili flakes (2 g)
½ teaspoon garlic powder (2 g)
Instructions
Season and cook the chicken until fully done, then slice.
Mix cottage cheese, yogurt, lemon juice, and salt.
Combine all spicy drizzle ingredients.
Assemble the bowl with rice, chicken, vegetables, and cottage cheese.
Drizzle sauce on top and serve.
