Description

A hearty one-skillet meal with tender barbecue-seasoned chicken, creamy rice, sweet corn, and melted cheddar cheese. Quick, flavorful, and perfect for busy weeknights or cozy dinners.


Ingredients

1 lb skinless, boneless chicken breasts, sliced
1 cup uncooked white rice
1 ½ cups chicken broth
¾ cup sweet BBQ sauce (alcohol-free)
1 cup frozen corn kernels
¼ cup chopped onions
2 garlic cloves, minced
2 tbsp all-purpose flour
1 ½ tsp smoked paprika
¾ cup shredded cheddar cheese
1 tbsp olive oil
Salt and pepper to taste


Instructions

Heat 1 tbsp olive oil in a large skillet over medium heat.
Sauté chopped onions and garlic in the skillet for 2 minutes.
Add sliced chicken and cook until browned and nearly cooked through (5-6 minutes).
Sprinkle flour, smoked paprika, salt, and pepper over the chicken. Stir.
Pour in chicken broth, stir to combine, and bring to a simmer.
Add uncooked rice, corn, and BBQ sauce. Mix well.
Cover and simmer over low heat for 18-20 minutes.
Remove from heat, let rest 5 minutes, then stir in cheddar cheese until melted
Transfer to oven at 350°F (180°C) if desired for extra cheese browning (5-10 mins).

Notes

Use shredded mozzarella or pepper jack cheese for a different flavor
Add diced bell peppers or jalapeños for extra spice
Store leftovers in an airtight container up to 3 days
Ensure BBQ sauce is pork-free or alcohol-free to meet halal standards
