Description

A creamy, tender chicken and rice dish that cooks itself in your slow cooker. Perfect for busy nights with rich, comforting flavors and zero stress.


Ingredients

Scale

1.5 cups long-grain white rice (uncooked)
2 lbs boneless, skinless chicken breasts
2 cups low-sodium chicken broth
1 small onion, chopped
1 clove garlic, minced
1 tsp dried thyme
1 tsp dried basil
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 cup frozen mixed vegetables (green beans, carrots, peas)


Instructions

Place uncooked rice at the bottom of a 6-quart slow cooker
Place chicken breasts on top of rice
Sprinkle chopped onion, garlic, thyme, basil, paprika, salt, and pepper over chicken
Drizzle olive oil over chicken
Pour chicken broth around the sides of the slow cooker
Tightly cover and cook on LOW for 4-5 hours or until chicken is tender and rice is fully cooked
Stir in frozen vegetables during the last hour of cooking

Notes

For extra flavor, add 1/2 cup halal chicken stock to the recipe
Use a meat thermometer to ensure rice is tender (25-30 minutes after cooking is complete)
Leftovers keep in the refrigerator for up to 4 days
