Ingredients
2 lbs beef sirloin tips or stew beef
2 tbsp olive oil
1 medium onion, sliced
3 garlic cloves, minced
2 tbsp tomato paste

1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
3 cups beef broth
2 tbsp cornstarch
Instructions
Heat olive oil in a skillet, brown beef in batches
Transfer beef to slow cooker
Add onion, garlic, tomato paste, Worcestershire, thyme, salt, and pepper
Pour in beef broth
Cook on low 6-8 hours or high 3-4 hours
Mix cornstarch with 2 tbsp cold water, stir into slow cooker
