Ingredients
2 pounds chuck roast, cut into chunks
2 pounds potatoes, cubed
1 large onion, quartered
3 cloves garlic, minced
2 cups water or vegetable broth
2 tablespoons all-purpose flour (for gravy thickening)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon sweet paprika
2 carrots, sliced
2 stalks celery, cut into pieces
Instructions
Pat beef dry and season with salt, pepper, paprika, rosemary, and thyme
Add potatoes, onion, carrots, and celery to the crockpot base
Place beef chunks on top of vegetables and dot with garlic
Pour water or broth over the beef
Sprinkle flour over the mixture
Cover and cook on low for 8 hours or high for 4 hours
Stir gently before serving to combine flavors

For added richness, sear beef in olive oil before cooking if time allows
