Ingredients

2 lbs beef stew meat or chuck roast, cut into 1-inch chunks
3 medium carrots, sliced
3 celery stalks, sliced
2 medium potatoes (Russet or Yukon Gold), diced
1 medium onion, diced
4 cloves garlic, minced
3 cups beef broth (use halal-certified)
1 can (14.5 oz) diced tomatoes
2 tbsp tomato paste
1 tbsp soy sauce (alcohol-free alternative to Worcestershire sauce)
1 tsp dried thyme
1 tsp dried rosemary
1 tsp garlic powder
1 tbsp olive oil
Salt and pepper to taste


Instructions

Heat olive oil in a skillet over medium-high heat. Sear beef chunks until browned on all sides (optional, but recommended for depth of flavor
Add seared beef, carrots, celery, onion, and garlic to the slow cooker
Stir in beef broth, diced tomatoes, tomato paste, soy sauce, thyme, rosemary, and garlic powder
Set slow cooker to ‘Low’ and cook for 8-10 hours, or ‘High’ for 4-6 hours until beef is tender
If sauce needs thickening, mix 1 tbsp cornstarch with 2 tbsp water and stir into stew during the last 30 minutes of cooking

Notes

Ensure beef and broth are halal-certified if required
Browning the meat is optional but significantly enhances flavor
For a shortcut, use pre-diced vegetables
Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months
