Ingredients
2 lbs beef chuck roast, cut into chunks
1 medium onion, diced
6 cloves garlic, minced (or 1½ tsp garlic powder)
2 cups beef broth
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
2 bay leaves
1 cup unsalted beef broth (for sauce thickness)
2 tbsp all-purpose flour (optional, for thickening)
Instructions
Preheat oven to 400°F (200°C). Sear beef chunks in a hot skillet until lightly browned (optional, for depth of flavor)
Add seared beef, diced onion, garlic, and seasonings to a 6-quart slow cooker
Pour 2 cups beef broth over the top
Cook on low for 8 hours or high for 4 hours
For thicker sauce: Whisk in 2 tbsp broth and 2 tbsp flour. Bring to simmer for 5-7 minutes before serving
