500 g boneless, skinless chicken breast, cut into bite-sized pieces
3 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 teaspoon salt
1 tablespoon olive oil
2 cups broccoli florets
2 medium carrots, sliced
1 red bell pepper, chopped
1 zucchini, sliced
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Fresh parsley, chopped (optional)
Lemon wedges (optional)


Instructions

Preheat oven to 200°C (400°F) and line a baking sheet.

Toss vegetables with olive oil, salt, pepper, and garlic powder. Roast for 20–25 minutes.

Season chicken with paprika, oregano, salt, and pepper.

Heat olive oil in a skillet and cook chicken for 5–7 minutes until golden and cooked through.

Add butter and garlic, cook until fragrant, and toss chicken to coat.

Serve chicken with roasted vegetables, garnish if desired.
