Description
A weeknight staple featuring tender chicken, rich parmesan-cream sauce, and al dente pasta. Ready in 30 minutes with minimal effort and pantry staples.
Ingredients
1.5 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
12 oz spaghetti or fettuccine pasta
5 cloves garlic (minced)
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
Optional: 1/4 cup sun-dried tomatoes (rehydrated), handful baby spinach, fresh parsley for garnish
Instructions
Prep ingredients (cut chicken, mince garlic, grate Parmesan)
Cook chicken in skillet over medium-high heat (5-6 min)
Add garlic to deglaze the pan
Pour in chicken broth, cream, and Parmesan
Stir until sauce thickens
Season with Italian seasoning, garlic powder, onion powder, salt, and pepper
Add cooked, drained pasta to the pan
Toss to coat in sauce
Stir in optional ingredients if desired
Serve hot with garnish
Notes
Use chicken thighs for richer flavor.
Substitute half heavy cream with whole milk for lighter version.
Add broccoli florets during cooking for extra veggies.
Pasta can be omitted for low-carb version.
Store leftovers in airtight container for 3-4 days.
