Description

A bright, flavorful grilled chicken dish paired with fluffy lemon parsley quinoa for a wholesome and satisfying meal.


Ingredients

Scale

4 boneless skinless chicken breasts (6 ounces each)

3 tablespoons olive oil

3 tablespoons fresh lemon juice

1 tablespoon lemon zest

3 garlic cloves minced

1 tablespoon parsley chopped

1 tablespoon oregano chopped

1 tablespoon thyme chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon paprika

For Quinoa:

1 cup quinoa

2 cups chicken broth or water

1 tablespoon olive oil

1 tablespoon lemon juice

2 tablespoons parsley chopped

1/2 teaspoon salt


Instructions

Whisk together olive oil, lemon juice, zest, garlic, herbs, salt, pepper, and paprika.

Marinate chicken 30 minutes to 4 hours.

Rinse quinoa and simmer with broth and salt for 15 minutes. Rest 5 minutes and fluff with olive oil, lemon juice, and parsley.

Grill chicken over medium-high heat 6–7 minutes per side until internal temperature reaches 165°F.

Rest chicken 5 minutes, slice, and serve over quinoa.

Notes

Marinate longer for stronger flavor.

Great for meal prep.

Add grilled vegetables for a fuller meal.

Chicken thighs can be substituted for breasts.
