Description

A rich and comforting low-carb casserole loaded with juicy chicken, tender broccoli, and a creamy three-cheese sauce baked until golden and bubbly.


Ingredients

Scale

4 boneless skinless chicken breasts, diced (1½ pounds)

4 cups broccoli florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

For Cheese Sauce

8 ounces cream cheese

1 cup heavy cream

1 cup shredded cheddar

1 cup shredded mozzarella

½ cup grated Parmesan

3 garlic cloves minced

1 teaspoon Italian seasoning

For Topping

1 cup cheddar cheese

½ cup mozzarella

2 tablespoons parsley


Instructions

Preheat oven to 375°F and grease a 9×13 baking dish.

Season chicken with oil and seasonings. Brown in skillet for 5–6 minutes.

Blanch broccoli for 2 minutes and drain.

Make cheese sauce by melting cream cheese, cream, garlic, seasonings, cheddar, mozzarella, and Parmesan.

Combine chicken and broccoli in baking dish.

Pour cheese sauce over mixture.

Top with remaining cheeses.

Bake 25–30 minutes until bubbly and golden.

Garnish with parsley and serve.

Notes

Use rotisserie chicken for a shortcut.

Freshly grated cheese melts best.

Can be assembled ahead and refrigerated before baking.

Freezes well for up to 2 months.
