Ingredients
1 lb (450 g) shrimp, peeled and deveined
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
4 cups (120 g) mixed greens
2 avocados, diced
1 cup (150 g) cherry tomatoes
1/2 cup (75 g) cucumber
1/4 cup (40 g) red onion
1/4 cup (15 g) fresh herbs
Instructions
Toss shrimp with olive oil, salt, pepper, and paprika.
Cook shrimp in a skillet for 2–3 minutes per side.
Chop vegetables and prepare salad base.
Whisk dressing ingredients together.
Assemble salad and add shrimp.
Drizzle dressing and serve immediately.
Notes
Use fresh lime juice for the best flavor. Add avocado just before serving to prevent browning. Adjust seasoning to taste.
