Ingredients
1 lb ground beef
12 oz penne or rotini pasta
1 medium onion, diced
3 cloves garlic, minced
14.5 oz can diced tomatoes
10.5 oz can cream of mushroom soup (or dairy-free alternative)
1 cup beef broth
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded mozzarella (optional)
1/4 cup grated Parmesan (optional)
Optional: 1 cup steamed broccoli or spinach
Instructions
Preheat oven to 375°F (190°C)
Brown ground beef in a skillet over medium heat until cooked through; drain excess fat
Add onions and garlic, sauté until softened (about 3 minutes)
Add diced tomatoes, cream of mushroom soup, and beef broth
Mix in Italian seasoning, garlic powder, smoked paprika, salt, and pepper
Bring to a simmer and cook for 5-7 minutes
Cook pasta according to package instructions and add to the skillet mixture
Stir until well combined; transfer to an oven-safe dish
